When it comes to grilling you have two types of grill mainly: traditional convection grills and infrared grills.  An infrared grill uses infrared heat to cook the meat (or whatever) directly.  It heats up the plate so that it is really hot, and you place the heat on the grill.  One of the main benefits of an infrared grill is that you are able to cook your meats a lot faster than you are able to on other types of grills.  Another benefit, related to the first one, is that you will have much better tasting meat since it won’t be surrounded in heat for a long period of time.  This keeps the juices in the meat giving you a nice tasty meal, straight from the grill.

Traditional grills use a process called convection in order to cook meat.  How convection works is that you heat up the areas around the meat, so that the meat will eventually be cooked.  While this method does work, there are a lot of drawbacks.  It can take a long time for it to get hot enough to cook the meat.  Then, the actually cooking process itself can take a long time.  Since you are not dealing with direct heat, the outside will undoubtedly be more cooked than the inside will.  This either leads to an overcooked outside or an undercooked inside, both of which can lead to problems.  Infrared grills uses the direct heat on the meat giving a nice even cooking throughout, and giving you good tasting meat.

Infrared grills have only recently become popular because the patent has expired.  Infrared grills have been used in restaurants and other commercials establishments for many years, they were just never available to consumers because the company who owned the patent only sold to restaurants.  That is why infrared grills are now in home allowing people to cook great tasting and evenly cooked meat.
